Half or Whole Hogs

Whole and half hogs available now.  If you like pork, you’ll love our pastured/hoophouse pork!  Check out video here.  Customers are raving about the flavor.

Bill emails, We`ve very much been enjoying the pork you raised, fantastic flavor, and I`ve been spreading the word to friends of mine…Avon did a great job processing and curing the bacon and hams…  The bacon is some of the best I`ve had in a long time, and I think you`ve got a great partner there. After living many years in Hungary, where the pork culture and varieties of bacon are akin to Wisconsin cheese varieties, I can say that it`s really special to find a producer such as yourself and a good processor to boot.”

Jeremy emails, The meat is delicious. We’ve only had the ham and bacon so far, I may make some chops later this week and maybe some sausage and sausage links this weekend. I simmered the bones over the past couple days. I tasted a bit of the stock. So rich and nutty. I’m loving it so far.”

It can be intimidating to place your first cutting order, but Andrew at Avon Locker will walk you through the process.  Customers have been pleasantly surprised at how user-friendly the whole process has been.

Rob emails, Cooked up a huge brisket on Sunday. Still (happily) enjoying leftovers. Delicious.  Thanks. The process was totally manageable on our end; engaging, personable and straight forward. Everything we hoped for and expected. I really liked that I could order cuts and packages exactly the way I wanted them.”

Here is how purchasing half a hog works:

Call or email me and set up a processing date for your hog.  You call and talk to Avon Locker with your cutting order.  If you know exactly how you want your pork, great.  If not, Andrew will walk you through all your options.  You will pay Avon directly for the processing and it will be around $100 to $150 per half hog depending on how much processing you have done.

The amount you pay to us for the pork is based on hot carcass weight, which is the weight after the hide and offal have been removed, but before further processing is done.

That weight will be around 100 lbs per half hog and we are currently charging $1.65 per lb.  So the cost will be around $165.

So the total cost for half a hog will be around $300.

The packaged, take-home pork will be around 50 to 75 lbs, again depending on how much processing you have done as minimal processing will result in a greater amount of take-home pork vs. removing bones, etc.

Email if you are interested or if you have any questions.

Thank you,
